Now and again my teen aged sons like to have little romantic dinners with their girlfriend on the farm. Usually, I have something easy and nice to serve but now and again they catch me off guard and I have to whip up something that is not only elegant, but tasty. Well, it happened, they caught me off guard so I needed to use a little creativity to make an appetizer and boy did it turn out just yummy. Enjoy!

I first started off with a lovely French bread. I had a French bread covered in Italian spices so the bread was already very flavorful. You could use a plain French bread but I think the flavored bread makes more of an impact.

Then I made about 1 cup of instant rice

Next, chopped very finely; oregano, basil, garlic, thyme, parsley and rosemary. I then added a generous amount of olive oil. Slice bread and brush with mixture then toast in oven for about 5 minutes.

Then, take two small pieces of Tapia fish and sauté them until nearly done.

Then, add the rice

Next, add the olive oil herb mixture to the fish and rice breaking up the fish as you go so that it is well incorporated.

Place this mixture on top of the toasted bread and top with grated Parmesan cheese. Fresh works best!

This made 6 pieces of French bread toast which is plenty for an appetizer.

Now, this was a spur of the moment idea with ingredients that we already had. I was a little worried that it was a weird combination but it was very yummy….
Enjoy!
