Pumpkin everywhere!October 7th, 2009

This time of year brings the pumpkin recipes to the Dingman household. We wanted to share our favorites with you. All of the recipes use Libby’s Easy Pumpkin Pie mix. This is different than the packed pumpkin because it is already sweetened and is ready to use.

Pumpkin cookies- Make any packaged sugar cookies according to directions. Use a table spoon to scoop the right amount. Press down with thumb as to make thumbprint cookies. Add a dab of pumpkin mixture to the top and bake as the recipe calls for.

Pumpkin Pancakes- Make your favorite pancake according to directions and top with pumpkin mix instead of syrup.

Pumpkin cereal- Make your favorite hot cereal according to directions. Ours is Cream of Wheat. Top with pumpkin mix and it is like eating pumpkin pie for breakfast.

Pumpkin Toast- Make some toast and add pumpkin mix instead of butter.

Pumpkin MilkshakesSeptember 28th, 2009

October is one of the kids favorite month of the year, mine too. The best part of the season is the endless supply of pumpkin. We make a lot of fun pumpkin recipes during fall and one of our favorites is pumpkin milkshakes. The kids call these yummy treats liquid pumpkin pie.

The first thing you will need is a can of Libby’s Easy Pumpkin Pie mix. Now be careful with this stuff, it has been known to be eaten right out of the can by my kids.

The next thing you will need is some ice cream, vanilla of course.

Then you will need a bit of milk.

I have never been one to measure so I am giving you the basic idea………….

fill your blender 3/4 way with ice cream, add at least 8 heaping tablespoons of pumpkin and about 1 cup of milk. Blend…………………

Serve up in a glass with a straw………….Yummy!
